The Westin Bear Mountain is currently recruiting for the position of Executive Chef.
About the job
Creation of fresh, healthy, innovative menus for all food and beverage outlets including all day restaurant, bar, banquets and catering and in-room dining, with a focus on high quality and presentation.
Ensuring all culinary associates are aware of standards and expectations through the development of a visual standard of performance document.
Supervising the preparation and cooking of food by culinary team.
Ensuring proper staffing and scheduling in accordance with productivity guidelines.
Demonstrates a passion and motivation for creativity and innovation to create exceptional culinary experiences.
Coach and mentor employees.
Ensure that all kitchen operations are compliant with legislated food safety regulations.
Responsible for monitoring food cost of sales by overseeing ordering, inventory, and food controls for the entire division.
Work in collaboration with suppliers and the purchasing department to ensure proper delivery (and quality) of all food items.
Assist in the annual planning of the Food & Beverage budget as it pertains to the kitchen (food cost, productivity), as well as implementation and regular monitoring of the budget/forecasts.
Actively participates in the reduction of energy consumption and green initiatives at all levels throughout the organization by supporting and participating in companywide programs.
Develop menus and pricing for all food operations.
Responsible for overseeing the recruitment and training of culinary team.
Responsible for the stewarding department.
About your qualifications
At least 5 years of experience in multi-outlet kitchens with a strong general operational knowledge and a minimum of 3 years of experience in a senior role
Red Seal Certification
Excellent communication and organizational skills.
Food Safe certified
Use of positive and effective communication skills both written and verbal.
Ability to work well with others to promote a cohesive team environment
Ability to prioritize and make effective decisions
Able to develop strong working relationships with both guests and team members
Advanced knowledge of the principles and practices of a food service environment
